Q. can pickling lime be used on vegetables other than cucumbers?

A. Yes, it can, however it has fallen out of favor because it reduces the acidity of the vegetables and elevates the risk of food poisoning:

"Pickling Lime
Pickling lime is used as a ´crisping agent´, to prevent the pickles from becoming soft. When called for in a recipe, it is added to the brine before the pickles are soaked, and the soaking time should be 12-24 hours. Then the pickles should be soaked in clean water for 1 hour, and then rinsed at least 3 times to ensure the lime is removed. It is often not recommended, as it is known to lower the acidity of the vinegar, making the pickle unsafe."

Q. This is not a question but a comment on one of your answers. You say that cheese after being frozen does not slice well, but becomes crumbly. My partner and I have been freezing cheese for years (all kinds -- cheddar, colby, mozarella, American, etc.) in block and shredded forms, and have never had any problem with a change in consistency or slicing. And it doesn`t matter if we thaw the cheese in the refrigerator or at room temperature.
